Nisin is a natural biological antimicrobial peptide produced by the fermentation of naturally occurring Lactococcus lactis. We developed a lactic acid bacteria expression system from a Nisin-producing Lactococcus lactis strain. The system is induced by Nisin and is used to express exogenous genes, especially Nisin-like bacteriocins which usually obtain better expression. This provides the possibility to prepare bacteriocins in large quantities.
In addition, we also use physicochemical and other mutagenesis methods to breed and screen high yield, high activity strains of Nisin and strains for special purposes.
